Quick Breakfast Recipes to Start the Day Right

Sunshine Toast

A warm breakfast that only takes about 10 minutes to prepare, sunshine toast is the perfect breakfast to give you energy for the day.

Ingredients:

  • 2 tablespoons butter
  • 1 slice bread
  • 1 egg
  • salt and pepper to taste

Directions:

  1. Melt one tablespoon butter in a small skillet over medium heat.
  2. Using a glass or cookie cutter, cut out the centers from the bread. Put only one side of bread into the butter, and grill bread until lightly toasted. Crack an egg into each bread hole (be careful not to break the yolk).
  3. Season with salt and pepper to taste.
  4. Cook until eggs are cooked to your desired consistency.

 

No-Cook Overnight Oatmeal

This recipe can be prepared the night before for a completely stress free morning. You can use nearly any fruit in the oats for a new flavor nearly every time.

Ingredients:

  • 1/3 cup milk
  • 1/4 cup rolled oats
  • 1/4 cup Greek yogurt
  • 2 teaspoons chia seeds
  • 2 teaspoons honey
  • 1 teaspoon ground cinnamon
  • 1/4 cup fresh blueberries

Directions:

  1. Combine milk, oats, Greek yogurt, chia seeds, honey, and cinnamon in a half-pint jar with a lid.
  2. Cover and shake until combined.
  3. Remove lid and drop in blueberries. Cover jar with lid.
  4. Refrigerate oatmeal overnight, approximately eight hours.

 

Scrambled Egg Muffins

Another easy meal to prepare the night before, scrambled egg muffins make for a delicious, balanced breakfast, perfect for a school morning on the go.

Ingredients:

  • 3/4 pound breakfast sausage
  • 1/8 cup minced onion
  • 1/8 cup minced green bell pepper
  • 1 (12 oz.) can refrigerated biscuit dough
  • 3 eggs, beaten
  • 3 tablespoons milk
  • 1/2 cup shredded Colby Jack cheese

Directions:

  1. Preheat oven to 400 degrees.
  2. In a large, deep skillet over medium-high heat, combine sausage, onion, and green pepper. Cook until sausage is evenly brown. Drain, crumble, and set aside.
  3. Next, separate the biscuit dough into 10 individual biscuits. Flatten each biscuit out, then line the bottom and sides of 10 muffin cups. Evenly distribute sausage mixture between the cups. Mix together the eggs and milk and divide between the cups. Sprinkle tops with shredded cheese.
  4. Bake in preheated oven for 18 to 20 minutes, or until filling is set.
