Banana Bread

This banana bread recipe is perfect for any occasion, especially cold fall mornings with a nice hot cup of coffee.

Ingredients

  • 1/2 cup Crisco shortening
  • 1 1/4 cup sugar
  • 2 to 3 smashed bananas
  • 2 eggs, separated
  • 5 tbs buttermilk
  • 1 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp salt
  • 1 tsp. vanilla

Directions

  1. Separate eggs. Beat egg whites until stiff and no longer foamy. Set aside.
  2. Mix Crisco, sugar, bananas, egg yolks, buttermilk, and vanilla.
  3. Add dry ingredients.
  4. Fold in egg whites.
  5. Brush a little butter or Crisco into whatever pan you choose to use.
  6. Bake at 325 degrees until light brown or until a toothpick comes out clean. (Helpful Hint: Whenever you start to smell whatever you are baking, it is almost done!)

Slice, add butter to taste, and enjoy!
