Lemon Coconut Cookies

If you are looking for a cookie that is soft on the inside with crispy edges, these Lemon Coconut cookies are what you need. Zesty yet sweet, these cookies are a light treat that will please your sweet tooth!

Ingredients:

  • 2/3 Cups Shortening
  • 1 1/2 Cups Sugar
  • Grated Zest of 1 Lemon
  • 1 Egg Beaten
  • 1/4 Cup Milk
  • 2 Tablespoons Lemon Extract
  • 2 Cups Flour
  • 2 Tsp. Baking Powder
  • 1/4 Tsp. Salt
  • 1 Cup Shredded Coconut
  • Powdered Sugar for Dusting

Directions:

Preheat the oven to 375. Cream the shortening, sugar and lemon zest in a large bowl; mix in the egg. Add the milk and lemon extract stirring to combine. In another bowl, sift together the dry ingredients and slowly stir into the sugar mixture. Mix in the coconut and drop by tablespoons onto an un-greased cookie sheet. Bake 10-12 Minutes. Dust with the powdered sugar.
