Cranberry Oatmeal White Chocolate Cookies

If you are searching for something to do while you are snowed in, having a Christmas business party, or celebrating the season in your classroom, then look no further! When making these delicious cranberry oatmeal white chocolate cookies, having leftovers is not something you need to worry about. They warm up your kitchen as well as your stomach. These cookies are soft and chewy and the fruit and oat additions provide healthy benefits to children.  Try out the recipe below and share the Christmas joy!

 

INGREDIENTS
2/3 cup butter, room temperature
2/3 cup light brown sugar
2 large eggs
1 1/2 cups old-fashioned oats
1 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
2/3 cup sweetened dried cranberries
2/3 cup white chocolate chips or chunks

 

DIRECTIONS
1. Preheat oven to 350 F. Lightly grease or line a cookie sheet.

2. In a large bowl, cream butter and sugar with an electric mixer until light and fluffy. Add eggs, mixing well. In a separate bowl: stir to combine oats, flour, baking soda, and salt. Slowly add to wet ingredients, mixing well to incorporate. Stir in cranberries and white chocolate chips. Drop by tablespoons onto the prepared baking sheet.

3. Bake in preheated oven for 8-10 minutes, until lightly browned on the edges. Let cool for 1-2 minutes on pan, before removing to a wire rack to cool completely.

Makes 24 cookies.
